Coppa is dry-cured pork shoulder. It is a well marbled cut with interlacing fat and meat that gives it a delicious and delicate flavor. Coppa is a perfect enhancement to any charcuterie board as it pairs wonderfully with anything pickled, a grainy mustard, and a delicate hard cheese like Manchengo. Feel free to cook with it as well! Like most charcuterie it adds excellent flavor to pasta or pizza and even wraps asparagus better than bacon. Or have it like we did at our wedding!
