Longaniza is a Spanish style salami that varies greatly from region to region with hundreds of interpretations within Spain alone. Our longaniza is made with our acorn-fed pork and a simple combination of garlic, coarse black pepper and oregano. It is handmade using natural casings and added mold cultures to provide consistent drying and flavor development. We recommend slicing our longaniza thinly and enjoying it with cheese, a side of patatas bravas (Spanish crispy potatoes), or on a baguette with tomato sauce.
