Coppa is a perfect enhancement to any charcuterie board as it pairs wonderfully with anything pickled, a grainy mustard, and a delicate hard cheese like Manchengo. This coppa is simply cured with no additional spices in order to highlight the slightly salty, slightly sweet, nutty and delicate acorn-fed pork flavor!
Coppa is best stored refrigerated, sliced thinly and served at room temperature.
